Fiesta Chicken Biscuit Casserole

This Fiesta Chicken Biscuit Casserole is a great substitution for the usual Taco Tuesday. Chicken casserole with canned biscuits, so easy!

Ingredients

  • 1 16.3 oz can Pillsbury Grands Southern Homestyle refrigerated biscuits
  • ½ cup chunky salsa
  • 2 cups cubed cooked chicken
  • 2 cups shredded cheddar cheese
  • ½ cup green bell pepper diced

Instructions

  • Preheat the oven to 375°F. coat an 8 x 8" square baking dish with nonstick cooking spray.
  • Separate biscuit dough into 8 biscuits. Cut each individual biscuit into 8 smaller pieces.
  • In a mixing bowl, toss biscuit pieces with salsa until the dough is thoroughly coated.
  • Spread biscuit pieces evenly across the baking dish. Evenly spread the chicken, then diced bell pepper, then shredded cheese over top of the dough layer.
  • Bake for 35 to 40 minutes, or until biscuits are a deep golden brown and no longer gooey.
  • Let stand for 15 minutes before serving warm.
