- 1 cup butter softened
- 1 ¾ cup granulated sugar
- 1 tsp vanilla extract
- 4 tsp Key lime juice
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 3 cups all-purpose flour
- 1 tsp Key lime zest optional
Instructions
- Preheat oven to 350°F
- In a mixing bowl, mix flour, baking powder, salt, and baking soda.
- In a separate bowl, cream together softened butter and sugar.
- Add vanilla, egg, key lime juice, and lime zest (optional).
- Add flour mixture, one cup at a time, and mix until thoroughly combined.
- Roll 1 tablespoon portions of cookie dough into balls and place on a parchment-lined baking sheet, or nonstick cookie sheet, roughly 1.5 inches apart.
- Bake for 15 minutes, or until edges are just barely browned.
