Hash Brown & Sausage Casserole

Ingredients

  • 5 cups frozen hash browns thawed
  • 1 cup sweet onion diced
  • ½ cup red bell pepper diced
  • 2 cups shredded cheddar cheese divided
  • 10 large eggs
  • 2 tbsp Dijon mustard
  • 1 tsp hot sauce
  • 1 cup half and half
  • tsp salt
  • 1 tsp ground black pepper
  • 1 14 oz. package Hillshire Farms Smoked Sausage sliced thin
  • 1 tsp fresh chives chopped

Instructions

  • Preheat the oven to 350°F
  • Coat a 9" x 13" baking dish with nonstick cooking spray
  • In a large mixing bowl, combine hash browns, bell peppers, onions, and 1/2 cup of shredded cheddar cheese. Transfer mixed ingredients to the baking dish and smooth into an even layer.
  • Whisk together the eggs, Dijon mustard, hot sauce, half-and-half, salt, and pepper. Pour the egg mixture over the hash brown ingredients in the baking dish. Lightly press down the eggs with the back of a spoon or spatula to allow them to soak into the hash brown layer.
  • Top with thin slices of smoked sausage (approximately 1/4” thick).
  • Bake for 45 minutes. Remove and top with remaining shredded cheddar cheese. Return the baking dish to the oven, and increase the temperature to 400°F. Bake for another 7 to 10 minutes, or until eggs are fully cooked and the top is slightly brown.
  • Allow cooling for 10 minutes. Sprinkle with chopped chives, and enjoy!
