Instructions
Preheat the oven to 350°F
Coat a 9" x 13" baking dish with nonstick cooking spray
In a large mixing bowl, combine hash browns, bell peppers, onions, and 1/2 cup of shredded cheddar cheese. Transfer mixed ingredients to the baking dish and smooth into an even layer.
Whisk together the eggs, Dijon mustard, hot sauce, half-and-half, salt, and pepper. Pour the egg mixture over the hash brown ingredients in the baking dish. Lightly press down the eggs with the back of a spoon or spatula to allow them to soak into the hash brown layer.
Top with thin slices of smoked sausage (approximately 1/4” thick).
Bake for 45 minutes. Remove and top with remaining shredded cheddar cheese. Return the baking dish to the oven, and increase the temperature to 400°F. Bake for another 7 to 10 minutes, or until eggs are fully cooked and the top is slightly brown.
Allow cooling for 10 minutes. Sprinkle with chopped chives, and enjoy!
