Coat a 9 x 13" baking dish with nonstick cooking spray
In a mixing bowl, combine shredded chicken, mozzarella cheese, pineapple tidbits, mayonnaise, and Sriracha sauce. Mix until well combined.
Separate dough into 8 biscuits. Cut each biscuit into three strips. Flatten strips into 4x2-inch rectangles. Place one heaping tablespoonful of spicy shredded chicken mixture on one half of each dough rectangle. Fold dough over top of chicken, however, do not seal dough shut. Arrange sliders on baking dish.
Bake for 35-40 minutes, or until biscuits are golden brown.
Brush biscuits with melted butter, and let stand for 5 minutes.
