Instructions

  • In a small mixing bowl, combine the smoked paprika, garlic powder, onion powder, dried thyme, dried oregano, dried basil, black pepper, cayenne pepper, and salt. Mix well until all the ingredients are evenly distributed.
  • Transfer the mixture to an airtight container, such as a small jar, and store in a cool, dry place until ready to use.
  • To make Cajun Andouille sausage, mix 1 tablespoon of the seasoning with 1 pound of ground pork and 1/4 pound of ground beef in a mixing bowl. Mix well until the seasoning is evenly distributed throughout the meat.
  • Shape the seasoned meat into sausage links or patties.
  • Heat a large skillet over medium-high heat. Add the sausage links or patties to the skillet and cook, turning occasionally, until browned and fully cooked, about 10-12 minutes.
  • Serve the Cajun Andouille sausage with rice, beans, or other Cajun-inspired dishes.
