Apple Pie Sheet Pan Pancake

  • Preheat oven to 375°F. Grease a large sheet pan with butter and set aside.
  • In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  • In a separate bowl, whisk together the milk and eggs.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Slowly pour in the melted butter and mix until combined.
  • Pour the batter into the prepared sheet pan and spread it out evenly.
  • In a medium saucepan, combine the apples, lemon juice, water, brown sugar, granulated sugar, cornstarch, cinnamon, and nutmeg.
  • Bring the mixture to a boil, stirring constantly. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  • Remove the mixture from heat and stir in the butter.
  • Pour the apple mixture over the pancake batter in the sheet pan.
  • Bake for 25-30 minutes, or until the pancake is golden brown and the apples are tender.
  • Serve warm with a dollop of whipped cream or maple syrup. Enjoy!
