Autumn Chicken and Wild Rice

Ingredients

  • 4 tbsp butter
  • 2 tbsp olive oil extra virgin
  • 1 sweet onion chopped
  • 4 cloves garlic minced
  • 16 oz cremini mushrooms
  • 2 honey crisp apples sliced thin
  • 4 tbsp fresh thyme chopped, stems removed
  • 5 cups chicken broth
  • 4 cups wild rice
  • 2 lbs boneless skinless chicken breasts cubed
  • 4 cups baby spinach
  • 3 cups Gruyere cheese shredded

Instructions

  • Preheat oven to 350°F.
  • In a large skillet, heat butter and olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  • Add mushrooms and apples and cook for an additional 5 minutes.
  • Add thyme and cook for 1 minute.
  • In a large bowl, combine chicken broth and wild rice.
  • Add mushroom mixture to the bowl and stir to combine.
  • Pour the mixture into a 9x13 inch baking dish.
  • Top with cubed chicken breasts and baby spinach.
  • Sprinkle with Gruyere cheese.
  • Cover with foil and bake for 45 minutes.
  • Remove foil and bake for an additional 15 minutes, or until cheese is melted and bubbly.
  • Serve warm. Enjoy!
