extra virgin

sweet onion
chopped

cloves
garlic

cremini mushrooms

honey crisp apples
sliced thin

fresh thyme
chopped, stems removed

chicken broth

cups
wild rice
2
lbs
boneless skinless chicken breasts
cubed

baby spinach

Gruyere cheese
shredded
Instructions
Preheat oven to 350°F.
In a large skillet, heat butter and olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
Add mushrooms and apples and cook for an additional 5 minutes.
Add thyme and cook for 1 minute.
In a large bowl, combine chicken broth and wild rice.
Add mushroom mixture to the bowl and stir to combine.
Pour the mixture into a 9x13 inch baking dish.
Top with cubed chicken breasts and baby spinach.
Sprinkle with Gruyere cheese.
Cover with foil and bake for 45 minutes.
Remove foil and bake for an additional 15 minutes, or until cheese is melted and bubbly.
Serve warm. Enjoy!
