BUFFALO CHICKEN SLIDERS RECIPE
During my 4 years of college in Central New York (Go Orange!), I was surrounded by 2 things. Snow and Buffalo Wings. Without these two things, life in New York would not be the same. Lake effect snow is a term I am glad I don’t hear all too often since moving to the South. And, as you can tell, Buffalo Chicken is still very near and dear to my heart! Buffalo Chicken has been around for 60 years and is now served in a variety of styles. From the original Buffalo Wing to the Buffalo Chicken Slider, this spicy treat is an enduring force! Grab some paper towels and celery sticks, it’s time to dig in!
WHAT ARE BUFFALO CHICKEN SLIDERS?
This is basically a miniature version of a buffalo chicken sandwich that you would make at home, or get at a restaurant. The main difference is that instead of a big bun, the bread is a biscuit, and I use shredded chicken instead of a whole breaded chicken breast.
WHAT DOES THESE SHREDDED BUFFALO CHICKEN SANDWICHES TASTE LIKE?
Buffalo Chicken Sliders are slightly spicy, however, the level of spice entirely depends on the wing sauce that you use in the recipe. I prefer a buffalo sauce that is not too spicy since I don’t want it to be the only thing that I taste. The biscuits are buttery and savory and pair nicely with the softness of the melted cheddar cheese.
BUFFALO CHICKEN SLIDERS INGREDIENTS
- Cooked, shredded chicken breast – 1.5 cups
- Cream cheese (softened and cubed) – 8 ounces
- Shredded cheddar cheese – 1 cup
- Buffalo wing sauce – 5 tablespoons
- Butter – 3 tablespoons
- Pillsbury Grands Southern Homestyle Refrigerated Biscuits – one 16.3 oz. can
- Green onion – 2
HOW TO MAKE THIS BUFFALO PULLED CHICKEN SLIDERS RECIPE
- Preheat the oven to 350°F. Coat a 9 x 13 baking dish with nonstick cooking spray.
- In a mixing bowl combine chicken, cream cheese, shredded cheddar cheese, 4 tbsp Buffalo wing sauce, and 2 tbsp of melted butter. Mix until well combined.
- Separate the biscuits into 8 individual biscuits. Cut each into 3 strips, and flatten the strips into 2”x4” rectangles. Place a heaping spoonful (1 1/2 – 2 Tbsp) of buffalo chicken mixture on one half of each dough rectangle. Fold dough over the top of the chicken.
- Place in a baking dish in 4 even rows.
- Place baking dish in oven and bake for 40 minutes, or until biscuits are golden brown. In a small mixing bowl, mix the remaining melted butter with buffalo wing sauce. Using a basting brush, brush the tops of biscuits with the wing sauce mixture.
- Garnish with green onions and serve.
CAN YOU MAKE SHREDDED CHICKEN SLIDERS AHEAD OF TIME?
You could make these sliders earlier in the day. Just cover them in aluminum foil to prevent the biscuits from drying out. I wouldn’t expect these to stay fresh in the refrigerator for more than a day. The buffalo wing sauce will soak into the biscuit dough, and turn them soggy. They will still taste great, but the structure would be off.
CAN YOU FREEZE BUFFALO SHREDDED CHICKEN SLIDERS?
I would not freeze these sliders. Since they are wrapped in biscuit dough, there is no real good way to reheat them after freezing without them turning into a slightly crusty, slightly soggy mess.
