I have a love/hate relationship with enchiladas. I love eating them, I hate making them. For some reason, I find the whole process labor intensive and just kind of a drag. There’s a lot of clean up, and it just seems to take too long. And frozen enchiladas, don’t get me started on those. Let me just say, bad things happen to good people.

Enchiladas are a traditional Mexican dish that contains meat or starchy vegetables wrapped in a corn tortilla, smothered in a savory sauce, and baked. This recipe however uses tortilla chips mixed in, in place of the filling wrapped in authentic corn tortillas, for time-saving purposes.
WHAT DOES THIS EASY ENCHILADAS RECIPE TASTE LIKE?
Savory, meaty, and cheesy. This skillet recipe wins the trifecta. The Best Homemade Enchilada Sauce adds a little bit of heat, but it is not overpowering and doesn’t hide any of the other flavors.
ONE SKILLET ENCHILADAS RECIPE INGREDIENTS
Ground Beef – 1 pound
Black beans – 1 15oz. can – drained and rinsed
16 oz of The Best Homemade Enchilada Sauce – if you are short on time and need to save a couple of minutes, you can use a can of store-bought enchilada sauce.
Cheddar cheese – 1 cup, shredded
Tortilla chips – 3 cups. I like to use the “bight size” chips instead of the large triangle-shaped tortilla chips, strictly for volume’s sake.
HOW TO MAKE EASY ENCHILADAS
This is a very quick and easy enchilada skillet recipe. Having said that, if you are going to be using The Best Homemade Enchilada Sauce recipe, make that beforehand. You will need it approximately five minutes into the process.
In a large, heavy skillet, over medium heat, cook your ground beef until browned. Drain off any extra fat and grease.
Add enchilada sauce and black beans.
Simmer for about 15 minutes.
Stir in your tortilla chips and let sit for about 2 minutes to soak up some of the excess sauce.
Add cheese. You can add half of the cheese and stir it in, or you can just top the skillet with the entire amount of cheese. It’s up to you.
Serve.

I would file this recipe under “Indulgent”. It is delicious, it is filling, and won’t be found on many spa menus. The tortilla chips and cheese kind of throw this recipe out of the running for Diet Food Of The Year. Having said that, it is tasty, and a crowd-pleaser.
CAN YOU MAKE ONE SKILLET ENCHILADAS AHEAD OF TIME?
If you are bringing this to a potluck party, or just want to prep some of the ingredients early, you certainly can make this ahead of time. This is one of those meals where the leftovers are just as delicious later in the day (or week) as it is right off the stove.
This meal can be made and stored in the freezer for future use. I highly recommend storing it in an airtight container to keep additional moisture out, and avoiding freezing burn.
