These Blueberry Biscuit Bombs are a great way to add some flavor to your Grands Biscuits. Biscuit bombs are so tasty and easy to make!
BLUEBERRY BISCUIT BOMBS RECIPE
WHAT IS A BISCUIT BOMB?
Biscuit bombs are amazing. Take your favorite ingredients and put them in a Pillsbury biscuit, fold the dough, and bake it. They are similar to hand pies in that way, and kind of like a jelly doughnut. However you can also use savory ingredients and make them into a creation that resembles a mini calzone.
WHAT DOES THESE BLUEBERRY BISCUIT BOMBS TASTE LIKE?
This blueberry biscuit bomb tastes like a combination of a jelly doughnut and a blueberry pie fresh out of the oven. Simple as that.
BLUEBERRY BISCUIT BOMBS INGREDIENTS
- Blueberries (fresh or thawed) – 1 1/2 cups
- Granulated sugar – 2 tablespoons
- Light brown sugar – 1 tablespoon
- Cornstarch – 1 tablespoon
- Ground cinnamon – 1/2 teaspoon
- Ground nutmeg – 1/4 teaspoon
- Cream cheese, softened and cubed – 8 ounces
- Powdered sugar – 1/4 cup
- Pillsbury Grands Biscuits (8 count) – 1 can
- Butter – 3 tablespoons
HOW TO MAKE THIS BLUEBERRY BISCUIT BOMBS RECIPE
- Preheat the oven to 350°F
- Line a large baking sheet with parchment paper
- In a saucepan, on the stove over medium-high heat, combine blueberries, granulated sugar, light brown sugar, cornstarch, ground cinnamon, and ground nutmeg. Stir occasionally for 5 minutes, or until the fruit mixture has thickened to the consistency of jam.
- In a large mixing bowl, using a hand mixer, beat cream cheese and powdered sugar until fluffy, approximately 1 minute.
- Split biscuits in half to form 16 dough circles. Arrange 8 of them on a parchment-lined baking sheet with about 2 inches of space between them.
- Spoon 1 tablespoon of cream cheese onto each biscuit. Spoon 1 tablespoon of blueberry filling on top of cream cheese. Top each with the remaining halves of biscuit dough. Crimp and seal edges with a fork. Any remaining filling can be used for dipping when serving.
- Bake according to directions on Pillsbury Grands Biscuit can (usually 13-16 minutes).
- Once biscuits are golden brown, melt butter in the microwave, and using a basting brush, brush the tops of the biscuits.
- Serve hot and enjoy!
CAN YOU MAKE BLUEBERRY BOMBS AHEAD OF TIME?
The only part of this recipe that I would prep ahead of time is the fruit filling. You can make that and refrigerate it for when you are ready to assemble the biscuits and bake them. Otherwise, serve these fresh.
CAN YOU FREEZE BLUEBERRY BOMBS?
Fruit biscuit bombs are best served fresh, hot out of the oven. If you freeze them and try to reheat them, you will have a mess on your hands. And, biscuits can only be cooked so many times and baking them in the oven, then freezing, and microwaving them will ruin the texture.
