I’m one of those people who loves buffalo chicken but is not a big fan of buffalo wings. I love the taste, and I love chicken. But the whole buffalo chicken wing, no thanks. I also love macaroni and cheese. I don’t think there has been a pot of macaroni and cheese that I haven’t come across and NOT sampled. So, it’s only natural for me to want to stuff two of my favorite foods into one flavorful dish. Take buffalo chicken and mac-n-cheese and create the ultimate game-day mashup. I present to you: Buffalo Chicken Mac & Cheese.

WHAT IS BUFFALO CHICKEN MACARONI AND CHEESE?
This is an entire meal in a pot. It is a pot of delicious mac & cheese, combined with chicken and the tanginess and spiciness of buffalo wing sauce.

WHAT DOES THIS MACARONI AND CHEESE TASTE LIKE?
There is a complex, cheesiness to this dish since you are using three different varieties of cheese. Blue, cheddar, and Monterrey Jack. The level of spice is entirely up to you, depending on how spicy your Buffalo Wing Sauce is. I prefer to use Sweet Baby Rays. It has a good balance of flavors, and it is not so spicy that it negates the cheese flavors. Especially the blue cheese kicker.
BUFFALO CHICKEN MAC & CHEESE INGREDIENTS
- 1 16 oz. box elbow macaroni
- 1 rotisserie roasted chicken, shredded
- Butter – 6 Tablespoons
- All-purpose flour – 6 Tablespoons
- Milk – 3 cups
- Shredded cheddar cheese – 1 1/2 cups
- Shredded Monterrey Jack cheese – 2 cups
- Buffalo wing sauce – 1/2 cup
- Blue cheese crumbles – 1/2 cup
HOW TO MAKE BUFFALO CHICKEN MACARONI AND CHEESE RECIPE
- Cook pasta according to the directions on the package
- Make a golden roux with butter and flour. In a heavy pot over medium heat, completely melt butter. Add flour and whisk until completely blended with the butter, using caution not to burn. It should be the consistency of a thick cake batter.
- Add milk, whisking until bubbly, about 5 minutes.
- Stir in cheddar and Monterrey Jack cheeses and mix until melted.
- Add buffalo wing sauce and blend into the cheese mixture.
- Add chicken, cooked macaroni, and blue cheese, and stir until completely mixed.
- Serve hot and enjoy.
CAN YOU MAKE MAC & CHEESE AHEAD OF TIME?
Yes! You can make Buffalo Chicken Mac and Cheese ahead of time. It will keep for a few days if you refrigerate it in an airtight container. Just reheat it before serving the leftovers. This is a great dish for those potlucks and tailgate parties. Also, this recipe is perfect for game-day feasts at home.
CAN YOU FREEZE MACARONI AND CHEESE?
Yes, you can freeze this recipe. Once you reheat it, you will probably want to give it a good stirring since some of the moisture from the pasta may have escaped while warming up.
