I’m a big fan of these cheesy muffin tin potato stacks. When it comes to portion control, I am a big fan of most foods cooked in muffin tins! These little potato stacks are a great comfort food snack or side dish.

WHAT IS POTATOES AU GRATIN?

Au Gratin Potatoes are often confused with Scalloped Potatoes. Not the worst thing in the world, to confuse the two. However, the difference is that Au Gratin Potatoes are cheesy, whereas Scalloped Potatoes are cooked in milk or cream.

WHAT DOES THIS MUFFIN TIN POTATOES AU GRATIN TASTE LIKE?

These are creamy, cheesy potato stacks. They are savory and hearty, and I like that the dried thyme gives it an added herbaceous flavor, though not too powerful. These are great comfort food snacks or side dishes.

MUFFIN TIN POTATO STACKS INGREDIENTS

  • Russet potatoes – 2 pounds
  • Butter – 2 tablespoons
  • Garlic – 2 cloves, minced
  • Heavy cream – 1/2 cup
  • Dried thyme – 1 teaspoon
  • Salt – 1/2 teaspoon
  • Shredded cheddar cheese – 1 cup

HOW TO MAKE THIS MUFFIN TIN POTATOES AU GRATIN STACKS RECIPE

  1. Preheat the oven to 350°F.
  2. In a microwave-safe bowl, melt together butter, garlic, cream, salt, pepper, and thyme. (Tip: either use 30-second bursts or loosely cover the bowl to prevent messes)
  3. Stack potatoes in a nonstick muffin tray so they fill half of each tin.
  4. Drizzle with 1/2 teaspoon of cream mixture.
  5. Sprinkle stacks with half of the shredded cheese.
  6. Top with remaining potato slices, and cover with the rest of the cream mix.
  7. Cover loosely with aluminum foil, and bake for 35 minutes. 
  8. Remove from oven. Top with remaining shredded cheddar cheese, and bake uncovered for another 10 minutes until potatoes are fork-tender.
  9. Let stand for five minutes before removing from the cups.
  10. Serve hot, and enjoy

CAN YOU MAKE MUFFIN TIN POTATO STACKS AHEAD OF TIME?

You can make these ahead of time and store them covered with foil in the refrigerator. I would refrain from freezing them.

CAN YOU FREEZE THESE POTATOES AU GRATIN STACKS?

You can freeze this Potatoes Au Gratin recipe, but, let them thaw out before you reheat them in the microwave. Letting the potatoes thaw first will help with reheating them evenly. Even though the muffin tin stacks are pretty small, they are fairly dense, and cooking them while frozen will not yield a consistent result. Don’t forget your airtight container!

WHAT TO SERVE WITH POTATOES AU GRATIN MUFFIN TIN STACKS?

Potatoes Au Gratin is a great comfort food recipe. These muffin tin stacks would be a great dish for some Mini Meatloaf Muffins. Or, put these on a plate with some perfectly seasoned chicken breasts.

  • 2 pounds Russet potatoes peeled and sliced into 1/10 inch thick rounds

  • 1 cup shredded cheddar cheese divided

Instructions

  • Preheat oven to 350°F.
