WHAT IS GARLIC MASHED RED POTATOES?

This is an easy-to-make mashed potato variation. Instead of using russet potatoes, this recipe utilizes red potatoes. I like red potatoes for mashing since I don’t have to be as diligent with pealing or taking out the potato “eyes”. Red potatoes are much more forgiving in that aspect. Consider them User-friendly Potatoes.

WHAT DOES MASHED POTATOES TASTE LIKE?

These Garlic Mashed Red Potatoes are loaded with butter and garlic. They are creamy with a little bit of added texture since the skins are included in the mashed potatoes. These mashed potatoes are a perfect side dish for a comfort food meal.

GARLIC MASHED RED POTATOES INGREDIENTS

  • Red potatoes, skin on, chopped – 3 pounds
  • Garlic, minced – 4 cloves
  • Butter – 8 tablespoons
  • Milk – 1 cup
  • Shredded parmesan cheese – 1/2 cup
  • Salt – 1.5 teaspoon
  • Ground black pepper – to taste

HOW TO MAKE MINCED GARLIC MASHED RED POTATOES

  1. In a large pot, fill with enough water to cover potatoes by an inch
  2. Bring potatoes to a boil and cook for approximately 15-20 minutes or until fork-tender.
  3. Remove potatoes and drain water.
  4. In the same large pot, melt butter and sauté garlic for about 1-2 minutes until fragrant. Do not burn.
  5. Return the potatoes to the pot with melted butter and pour in the milk.
  6. Using a potato masher or electric hand mixer mash potatoes to the desired consistency.
  7. Mix in parmesan cheese and salt and pepper.
  8. Serve immediately.

CAN YOU MAKE GARLIC MASHED RED POTATOES AHEAD OF TIME?

In my opinion, mashed potatoes have a limited shelf life, even in the refrigerator. They can dry out pretty quick, even if you seal them up, they just never seem to maintain the original consistency and texture.

CAN YOU FREEZE CREAMY GARLIC MASHED POTATOES?

Much like rice, I prefer not to freeze mashed potatoes. I also don’t really like to refrigerate them either. Don’t get me wrong, I love leftovers, but mashed potatoes have a way of changing their consistency when refrigerated. If you do reheat yours in the microwave, I would stir mine up halfway through the cooking time, that way they will heat evenly, and you won’t have dried out chunks of potato.
