These buttery Garlic Mashed Red Potatoes are the perfect addition to a hearty meal. Great for the whole family, or a meal prep must-have.
This is an easy-to-make mashed potato variation. Instead of using russett potatoes, this recipe utlizes red potatoes. I like red potatoes for mashing since I don’t have to be as diligenet with pealing or taking out the potato “eyes”. Red potatoes are much more forgiving in that aspect. Consider them User-friendly Potatoes.
These Garlic Mashed Red Potatoes are loaded with butter, and garlic. They are creamy with a little bit of added texture since the skins are included in the mashed potatoes. These mashed potatoes are a perfect side dish for a comfort food meal.
In my opinion, mashed potatoes have a limited shelf life, even in the refrigerator. They can dry out pretty quick, even if you seal them up, they just never seem to maintain the original consistency and texture.
Much like rice, I prefer not to freeze mashed potatoes. I also don’t really like to refrigerate them either. Don’t get me wrong, I love leftovers, but mashed potatoes have a way of changing their consistency when refrigerated. If you do reheat yours in the microwave, I would stir mine up halfway through the cooking time, that way they will heat evenly, and you won’t have dried out chunks of potato.
Garlic Mashed Potatoes go well with all sorts of dishes, it is a very versatile side. If you have a craving for a perfectly seasoned chicken breast, then these potatoes are the perfect sidekick.
