BEEF ENCHILADA CASSEROLE RECIPE

Have you ever been in the mood for a certain meal, but don’t want to go through the hassle of actually going through all the steps to cook the meal? That’s why I love casseroles! My favorite casseroles are the kind that has the ingredients of another dish that is more labor-intensive, yet, tastes the same. I present to you: Beef Enchilada Casserole.

WHAT IS ENCHILADA CASSEROLE?

Enchiladas are a Mexican recipe of ground or shredded meat and cheese wrapped in a corn tortilla, covered in enchilada sauce, and baked. In this Mexican-inspired recipe, we take all those similar ingredients and layer them instead of rolling them up.

WHAT DOES THIS BEEF ENCHILADA CASSEROLE TASTE LIKE?

This is a delicious Mexican-inspired casserole. It is beefy, savory, cheesy, and very satisfying. It tastes like a combination of beef enchiladas and a deconstructed beef taco. If you like those two, then you will love this enchilada casserole!

BEEF ENCHILADA CASSEROLE INGREDIENTS

  • Small corn tortillas – 10
  • Cooking spray
  • Olive oil – 1 tablespoon
  • Ground beef – 1 pound
  • Taco Seasoning – 1 tablespoon
  • Pinto beans – one 15 oz. can
  • Red enchilada sauce – 2 cups
  • Tomatoes – 2
  • Diced green onions – 1/4 cup
  • Mexican blend shredded cheese – 2 1/2 cups

HOW TO MAKE THIS MEXICAN TORTILLA CASSEROLE RECIPE

  1. Preheat the oven to 350°F.
  2. Spray a 9 x 13 baking dish with nonstick cooking spray.
  3. In a heavy skillet, over medium heat, warm olive oil, then add ground beef. Cook beef until completely browned.
  4. Mix taco seasoning and pinto beans with cooked ground beef, and continue cooking for approximately two more minutes.
  5. Coat the bottom of a baking dish with approximately 1/4 cup of enchilada sauce.
  6. Layer about 1/3 of the corn tortillas over enchilada sauce, add 1/3 of meat and beans mix, followed by a layer of cheese, and sauce. Repeat the layers of corn tortillas, meat, beans, cheese, and sauce, until all the ingredients are used.
  7. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for 10 more minutes.
  8. Top with diced tomatoes and green onions and serve hot.

CAN YOU MAKE BEEF MEXICAN CASSEROLE AHEAD OF TIME?

This Enchilada casserole can be made earlier in the day if you are prepping for a party, or if you are making a large batch for your weekly meal prep. The casserole will keep fresh, covered with aluminum foil, in the refrigerator for a few days.
