I will scream it from the rooftops, “I love my Instant Pot“. House Hunk Confession: I have missed the boat once or twice when it comes to being an early adopter of awesome innovations. I clearly remember in college when a friend was extremely excited talking about his new cell phone, and it had a camera. And my response? “A phone with a camera? That’s like the dumbest thing I have heard of. Why would you want something that does that?” And how did I try to one-up this guy? By showing him a tiny outer screen of my flip-phone with a pixelated panda bear walking in place. So yeah, I jumped on the Instant Pot bandwagon, and I am glad I did. Saute? Yes. Cook hearty stews with tender meats? Absolutely. Knock it all out in under an hour? I’m sold.
Pressure cooking is great because the sauces that you are cooking with get all in the meat and veggies. You ever make a recipe, and you are all excited because the taste of the sauce you took during prep-work was amazing? WHAT DOES THIS INSTANT POT GINGER SOY CHICKEN TASTE LIKE?
This is a wonderful chicken dish that incorporates flavors from some of your favorite Asian cuisines. This Instant Pot recipe is loaded with soy sauce, ginger, and garlic. Aside from the chicken, you will be tasting savory, sweet, and tangy all at the same time.
GINGER SOY CHICKEN INGREDIENTS
- 12 Chicken drumsticks with the skin still on. Makes for nice crispiness after broiling.
- Water – 1/3 cup
- Soy Sauce – 1/2 cup
- Honey – 3 tablespoons
- Light Brown Sugar – 2 tablespoons
- Rice Vinegar – 2 tablespoons
- Garlic – 3 cloves (minced)
- Fresh Ginger – 1.5 teaspoons (minced)
- Yellow Onion – 1 small, finely chopped
HOW TO MAKE THIS INSTANT POT CHICKEN RECIPE
I love this recipe because it involves very little hands-on time, and can be made in under an hour.
- In a medium-size mixing bowl, combine water, soy sauce, honey, vinegar, onion, and brown sugar. Whisk until well combined.
- Pour sauce mixture into Instant Pot. Make sure to get all the brown sugar out of the bottom of the bowl too.
- Add the chicken to Instant Pot and coat in sauce.
- Cook on high for 12 minutes
- Quick-release steam.
- Turn on saute setting and begin simmering and reducing the sauce.
- While reducing the sauce, remove chicken pieces and place them on a nonstick foil-lined baking sheet.
- Broil chicken for 3-4 minutes on each side, use caution to not burn the chicken.
- Once the sauce has reduced, plate chicken, cover in sauce and serve.
- Enjoy!
IS GINGER SOY CHICKEN CONSIDERED HEALTHY?
This is a good protein-packed meal. If you are on Keto or another low carb plan, then you may want to consider having this meal earlier in the day when you are more likely to burn off the sugars in the honey and brown sugar. Ginger has been shown to have numerous health benefits, from lowering blood sugar to anti-inflammatory effects.
CAN YOU MAKE INSTANT POT GINGER SOY CHICKEN AHEAD OF TIME?
I have doubled this recipe intending to have leftovers. As long as you store the leftover chicken in an airtight container, you can keep it in your refrigerator for about a week. This is a great recipe to add some variety to your meal prepping.

CAN YOU FREEZE THIS CHICKEN RECIPE?
You can freeze this and warm it up later, but I am kind of iffy about freezing cooked on-the-bone meat and then recooking it later. Something about the texture, it seems to get a bit slimy. But if you enjoy it, have at it.
