- Raw veal, trimmed of excess fat and cut into small pieces – as many pounds as you would like – however you will be working in batches.
HOW TO GRIND YOUR OWN VEAL
When I realized how to mince veal, I was kind of kicking myself wishing I had done this sooner.
1. Line a metal baking sheet with wax paper, or nonstick aluminum foil.
2. Using a sharp knife, cut raw veal into pieces no thicker than 1.5 inches.
3. Arrange veal pieces on baking sheet in a single layer. The veal must be in a single layer so it can freeze uniformly. And since we are not freezing the veal completely, this is important.
4. Freeze for 20-25 minutes (depending on how cold your freezer is), or until the veal is firm to the touch, but not solid.
5. Working in small batches, using a food processor, pulse veal parts until they are evenly ground, but not completely ground into a paste.
IS GROUND VEAL HEALTHY?
Ground veal can be a healthy option as it is a good source of protein, vitamins, and minerals. CAN YOU GRIND VEAL AHEAD OF TIME?
Yes, you can grind veal ahead of time and store it in the freezer for later use. Once you’ve ground the veal, transfer it to a large bowl and allow it to cool before portioning it into freezer-safe containers labeled with the date and weight. Store the ground veal in the freezer for up to three months. When you’re ready to use it, simply thaw it in the refrigerator overnight and use it as desired.
