HASH BROWN AND SAUSAGE CASSEROLE RECIPE

Who is on the hunt for a casserole that can be served almost anytime time of the day? Breakfast, brunch, breakfast-for-dinner? And, it’s got to be simple to prepare, taste great, and satisfy a raging hunger craving? Allow me to introduce you to this sausage and hashbrown casserole. Melted cheese, shredded potatoes, smoked sausage, and quite a few eggs. Hot dang!

WHAT IS HASH BROWN AND SAUSAGE CASSEROLE?

Basically, this is almost a complete breakfast in a pan. It is very filling, loaded with meat, cheese, eggs, and shredded potatoes.

WHAT DOES THIS SAUSAGE HASH BROWN CASSEROLE TASTE LIKE?

This a savory and hearty casserole. The smoked sausage adds another level of flavor that you would not get if you just used regular breakfast sausage. It is very filling so you can get away with just eating it on its own or as a side for a larger breakfast spread.

SAUSAGE AND HASH BROWNS CASSEROLE INGREDIENTS

  • Frozen hash browns – 5 cups
  • Sweet onion – 1 cup (diced)
  • Red bell pepper – 1/2 cup (diced)
  • Shredded cheddar cheese – 2 cups
  • 10 eggs
  • Dijon mustard – 2 tablespoons
  • Hot sauce – 1 teaspoon
  • Half & half – 1 cup
  • Kosher salt – 1.5 teaspoons
  • Ground black pepper – 1 teaspoon
  • Hillshire Farms Smoked Sausage, sliced thin – one 14 oz. package
  • Chopped chives – 1 teaspoon

HOW TO MAKE THIS HASH BROWN AND SAUSAGE CASSEROLE RECIPE

  1. Preheat the oven to 350°F
  2. Coat a 9 x 13″ baking dish with nonstick cooking spray
  3. In a large mixing bowl, combine hash browns, bell peppers, onions, and 1/2 cup of shredded cheddar cheese. Transfer mixed ingredients to the baking dish and smooth into an even layer.
  4. Whisk together the eggs, Dijon mustard, hot sauce, half-and-half, salt, and pepper. Pour the egg mixture over the hash brown ingredients in the baking dish. Lightly pressed down the eggs with the back of a spoon or spatula to allow them to soak into the hash brown layer.
  5. Top with thin slices of smoked sausage (approximately 1/4” thick).
  6. Bake for 45 minutes. Remove and top with remaining shredded cheddar cheese. Return the baking dish to the oven, and increase the temperature to 400°F. Bake for another 7 to 10 minutes, or until eggs are fully cooked and the top is slightly brown.
  7. Allow cooling for 10 minutes. Sprinkle with chopped chives, and enjoy!

Yes! In fact, you may want to prep all the ingredients the night before if you are planning on serving this recipe for breakfast or brunch. Just put it in the fridge and cover it up with some aluminum foil. You can also make this and bake this and keep it in the refrigerator for a few days covered up and it will stay fresh.

Sure, you can freeze this breakfast casserole. I tend to hold off from freezing any casserole that contains a bunch of eggs because sometimes the moisture content can get separated and some of it may thaw out and seem watery. However, in this case, the potatoes will soak up any extra moisture.
