BERRIES AND CREAM BREAKFAST BISCUIT BAKE RECIPE

Variety is the spice of life. It’s true. And it’s also true that it is easy to get caught in a rut when it comes to making breakfast or brunch. You wake up, you are still a bit groggy from a night of sleep that may not earn high scores on your sleep tracker. And pouring a bowl of cereal and splashing it with milk is just too darn easy. I’ve been there, you aren’t alone. You may not regret that bowl of cereal that you ate in front of the kitchen sink, but you most likely won’t remember it, or at the very least, brag about it on social media. Time for some variety. Maybe you are thinking of making brunch for the family this weekend as a surprise, or, you might have a potluck coming up and need to secure some bragging rights. Time set aside Snap, Crackle, and Pop and flex your kitchen skills with something delicious, and a bit unexpected. This Berries and Cream Breakfast Biscuit Bake is a crowd-pleaser. This breakfast casserole is sweet, slightly savory, and very filling…unlike that bowl of cereal.

WHAT DOES THIS BERRY BREAKFAST BAKE TASTE LIKE?

This is a very sweet brunch recipe, however, the addition of the biscuits and the cream cheese make it a filling dish as well. It is similar to a deconstructed fruit tart, Blackberry Biscuit Bombs, or Blackberries & Cream Breakfast Biscuit Casserole.

BERRIES AND CREAM BREAKFAST BISCUIT BAKE INGREDIENTS

  • Softened and cubed cream cheese – 3/4 cup
  • 1/2 cup powdered sugar
  • Milk – 2 tablespoons
  • 1 can Pillsbury Grands biscuits; each biscuit cut into eight pieces
  • Fresh or thawed mixed berries – 2 cups

IS THIS BERRIES AND CREAM BREAKFAST BISCUIT BAKE HEALTHY?

Berries are almost always a good thing to get your day going. But mixing them with powdered sugar, cream cheese, and biscuits will negate any positive effects that the berries bring to the table. This breakfast casserole is probably best saved for special occasions, or enjoyed in small portions. But I do believe it should be enjoyed!

CAN YOU MAKE A BISCUIT AND BERRY CASSEROLE AHEAD OF TIME?

You can definitely prep all the ingredients, put them in the casserole dish and then refrigerate until you are ready to bake. However, I wouldn’t let it sit longer than 48 hours unbaked.

CAN YOU FREEZE THIS CREAMY BERRY CASSEROLE?

I would not freeze this biscuit casserole. If you were to freeze it, and then thaw it, you would probably notice that the mixed berries have almost liquified. It would probably still taste delicious, but the texture would be a bit off.
